Well, my personal favorite is definately Masterplan...

Mike Dimeo - Vocals (Riot)
Roland Grapow - Guitars (Helloween)
Jan S. Eckert - Bass (Iron Savior)
Axel Mecknrott - Keyboards (Gamma Ray's live keyboardist)
Mike Terrana - Drums (Rage, Axel Rudi Pell)

ex members:
Jorn Lande - Vocals (solo, Ark, Millenium, more)
Uli Kusch - Drums (Helloween)

Personally, I feel they've done amazing amazing stuff thus far... two of the best melodic metal albums in recent years, and the 3rd album, due in March 07 holds even more promise.

Some incarnations of Yes (Drama, 90125) were (arguably) supergroups.
Ayreon (Not really a supergroup, but awesome lineups of musicians each time)
