Nevermore - This Godless Endeavor After six minutes of a really good song he bursts into this.

Not the best quality but I think you all know the solo. I especially love the second part.

I really dislike solos for the most part, but these have always stuck out to me:

Deicide - Scars of the Crucifix
Vital Remains - Dechristianize

I've always found that Judas Priest is the most consistent band with solos. Dat Painkiller solo =
