I'd say either Iron Maiden - Flight 666 or Between the Buried and Me - Colors_LIVE. Haven't heard many, though.

Ministry - In Case You Didn't Feel Like Showing Up (1990) - The energy and intensity here blows away the studio versions of these songs. You can remember that Ministry was actually good once. Other great live albums are:

Napalm Death - Live Corruption (1990)
Rammstein - Live Aus Berlin or Volkerball, both are great
Pink Floyd - 1977 Oakland bootleg
AC/DC - 10/16/1979 Towson, MD soundboardbootleg
Black Sabbath - 8-5-1975 soundboard bootleg
Iron Maiden - Hammersmith 1982 on the Early Years DVD

And I would second or third the votes for the following:
Rush - All The World's A Stage (1976)
Judas Priest - Unleashed in the East (1979)
Genesis - Seconds Out (1977)

I am looking forward to live releases coming out soon from Rush and Epica.

There are many unofficial live recordings that are personal favorites (moreso than official releases), but my favorite official live albums would be (in no order):

Slayer - Live : Decade of Aggression, Still Reigning
Cannibal Corpse - Live Cannablism, 15 Year Killing Spree, Centuries of Torment
Pantera - Live : 101 Proof
Nirvana - From The Muddy Banks of the Wishkah

Can't believe I forgot all the CC ones, absolutely killer. That Pantera album as well, probably the most energy I've ever heard in a live album, particular I'm Broken. 'I'm having a good tiiiiiiiime!' then the riff kicks in, chills, every time.
